Recipe: Baked Halibut2 lbs. fish
1 tsp. salt
2 Tbsp. margarine
14 oz. can mushrooms, drained (sliced fresh mushrooms even better) 1 cup sour cream
1/4 cup cooking sherry
Sprinkle salt on fish and place into oven at 425 degrees for 10
minutes. Meanwhile, sauté mushrooms in margarine. Remove pan from heat, adding the sour cream and wine to the mushrooms. Remove fish from oven, lowering temperature to 375 degrees. Pour sauce over fish and return to oven for another 10 minutes. (When serving, the addition of sprays of parsley -- as with any fish dish -- is attractive as well as nutritional.) Serves 4 to 6.
